Scale a single cocktail recipe to a large batch for parties.

Batch cocktails save time at parties and ensure consistent drinks for every guest. The key is scaling each component separately - spirit, mixer and citrus. For batching, mix everything except carbonated ingredients and ice. Add soda water and ice when serving. A standard pitcher holds about 64 oz (8 drinks) and a punch bowl holds about 1.5 gallons (24 drinks).

Multiply each ingredient by 20. For a margarita (2 oz tequila, 1 oz lime, 1 oz triple sec per drink), you need 40 oz tequila (about 1.6 bottles), 20 oz lime juice and 20 oz triple sec.
A 750 ml bottle (25.4 oz) makes about 12-13 standard cocktails at 2 oz of spirit per drink. Plan for 1 bottle per 12 guests if serving one type of cocktail.
Mix spirit, juice and sweetener ahead of time. Do not add carbonated ingredients (soda, tonic, sparkling wine) until serving. Refrigerate the batch - cold cocktails taste better.
Plan for 1/2 pound of ice per person for cocktails, plus extra for chilling. For 20 guests, buy at least 15 lb of ice.
Citrus-based batches are best made 2-4 hours ahead. Spirit-only batches (like negronis) can be made days ahead. Always add fresh citrus garnish at serving time.
